Heat oil in a large skillet over medium-high heat. Add the chopped onion and sauté until softened, about 2-3 minutes.
Add the ground beef to the skillet. Cook, breaking it apart with a spoon, until browned all over.
Stir in the tomato paste and cook for one minute.
Sprinkle the taco seasoning over the beef and stir to combine. Cook for another minute until fragrant.
To assemble, lay a tortilla flat. Sprinkle a layer of shredded cheese on one half, top with the beef mixture, then add another layer of cheese.
Fold the tortilla in half to create a taco.
Wipe out the skillet or use a new one. Add a thin layer of oil and heat over medium heat. Carefully place the assembled tacos in the pan.
Pan-fry the tacos for 2-3 minutes per side, until the tortilla is golden brown and crispy and the cheese is fully melted.
Serve immediately, garnished with fresh cilantro, with lime wedges and avocado crema on the side for dipping.
