Bring a small pot of water to a boil. Add the carrot and cook 2 minutes. Add the prawns and cook until they're just cooked through, 1 to 2 minutes more. Drain and then return them to the pot.
Add the corn, edamame, shiitakes, chicken stock, soy sauce, sake, sugar, and 1/2 teaspoon of salt. Set the pot over medium-high heat and bring to a boil.
In a small container, stir together the cornflour and 45ml of water until smooth. Gradually add the cornflour mixture to the pot, stirring constantly.
Let the stock mixture come to a boil again and cook just until slightly thickened, about 3 minutes. Take the pot off the heat and stir in the sesame oil and pepper to taste; keep warm, covered.
Heat the vegetable oil in a large skillet over medium-high heat until it shimmers. Add the eggs and cook, stirring constantly, until they're barely cooked, about 30 seconds.
Add the rice and cook, stirring often and breaking up the clumps but making sure not to smash the grains, until heated through and combined with the egg.
Season the rice with the remaining salt. Mould the rice into portions using a bowl or cup and unmould into shallow serving bowls.
Pour the warm prawn and vegetable sauce over the moulded rice. Garnish with sliced spring onion greens and serve immediately.
Store cooled fried rice and sauce separately in airtight containers in the refrigerator for up to 3 days; reheat rice gently in a skillet over medium heat and warm sauce over low heat before moulding and serving.

Yes. Prepare the prawn and vegetable sauce up to 2 hours in advance and reheat gently over low heat, stirring occasionally, before serving. Keep covered to retain warmth.
Day-old or 2-day-old rice has less moisture and separates better when fried, preventing clumping. If using fresh rice, spread it on a tray to cool and dry for 30 minutes before cooking.
Cook the beaten eggs in the hot oil for about 30 seconds, stirring constantly, until barely set but still slightly soft. They will continue to cook when mixed with the rice.
Yes. Use the same weight of diced chicken breast, cooked separately, or leftover cooked chicken. Adjust seasoning to taste as chicken absorbs salt differently than prawns.
Pack warm fried rice firmly into a small bowl or teacup, then invert it directly into a shallow serving bowl. The rice will hold its shape as it cools slightly.
