Thinly slice the onions.

In a large cast iron skillet over medium heat, add 1 tablespoon of olive oil and the butter.

Add the sliced onions to the skillet and season with salt and pepper.

Cook the onions, stirring occasionally, for 25-30 minutes until deeply caramelized and golden brown.

While the onions are cooking, season the chicken thighs on all sides with salt, pepper, garlic powder, and paprika.

Once caramelized, remove the onions from the skillet and set aside.

Add the remaining tablespoon of olive oil to the same skillet. Place the chicken thighs skin-side down and sear for 5 minutes per side until golden and crispy.

Remove the seared chicken from the skillet and set aside.

Sprinkle the flour into the pan drippings and stir to form a roux. Cook for 1 minute, scraping up any browned bits from the bottom of the pan.

Deglaze the pan by pouring in the white wine, stirring constantly to combine.

Gradually whisk in the beef broth, followed by the garlic and pepper paste (if using) and chopped thyme.

Bring the sauce to a simmer and cook for about 4 minutes, until it has thickened slightly.

Return the chicken thighs to the skillet with the sauce.
