In a small bowl, combine the Italian seasoning, garlic powder, onion powder, lemon pepper, salt, and black pepper. Mix well and set aside.
Using a pizza cutter or knife, cut each pita bread round into 8 equal triangles.
Heat about 2 inches of vegetable oil in a large, deep skillet over medium-high heat.
Carefully add the pita triangles to the hot oil in a single layer, being careful not to overcrowd the pan. Fry for 1-2 minutes per side, until golden brown and crispy.
Using tongs, remove the fried pita chips from the oil and place them on a wire rack to drain excess oil.
While the chips are still hot, transfer them to a large bowl. Sprinkle the prepared spice mix over the chips and toss well to coat evenly.
Serve immediately with your favorite dip.
Store cooled pita chips in an airtight container at room temperature for up to 3 days; reheat in a 300°F oven for 2–3 minutes to restore crispness.

Yes. Brush pita strips lightly with oil, season, and bake at 375°F for 8–10 minutes until golden and crispy. They won't be quite as fluffy as fried chips.
Heat oil to 350–375°F. Use a thermometer for accuracy. If too cool, chips absorb oil; too hot, they brown before crisping inside.

Yes. Fry and season them up to 3 days in advance. Store in an airtight container and reheat briefly before serving.
Hummus, tzatziki, baba ganoush, spinach-artichoke dip, or ranch work best. The savory spice blend complements Mediterranean and creamy dips.
