In a small bowl, combine the Italian seasoning, garlic powder, onion powder, lemon pepper, salt, and black pepper. Mix well and set aside.
Using a pizza cutter or knife, cut each pita bread round into 8 equal triangles.
Heat about 2 inches of vegetable oil in a large, deep skillet over medium-high heat.
Carefully add the pita triangles to the hot oil in a single layer, being careful not to overcrowd the pan. Fry for 1-2 minutes per side, until golden brown and crispy.
Using tongs, remove the fried pita chips from the oil and place them on a wire rack to drain excess oil.
While the chips are still hot, transfer them to a large bowl. Sprinkle the prepared spice mix over the chips and toss well to coat evenly.
Serve immediately with your favorite dip.
