Roughly slice the ginger. Add the sliced ginger, brown sugar, and water to a saucepan.
Bring the mixture to a boil over medium heat, then simmer until the liquid thickens slightly and becomes a golden brown syrup.
Strain the syrup through a fine-mesh sieve into a jar and let it cool.
To assemble the drink, fill a tall glass with ice cubes.
Pour in a couple of tablespoons of the homemade ginger syrup.
Top the glass with carbonated water and stir gently to combine.
Garnish with a lemon slice and serve.
