In a large skillet, brown the ground beef over medium heat.
While the beef is cooking, chop the onion.
Once the beef is browned, drain off any excess grease.
Add the chopped onion to the skillet with the beef and cook until softened.
Meanwhile, bring a pot of water to a boil and cook the egg noodles according to package directions until al dente, about 5 minutes. Before draining, reserve about 1/4 cup of the pasta water.
Mince the garlic and add it to the skillet with the beef and onions.
Slice the mushrooms and add them to the skillet. Cook until the mushrooms are tender and have released their liquid.
Stir in the sour cream until well combined.
If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
Season with salt and a generous amount of black pepper to taste.
Add the cooked and drained noodles to the skillet.
Mix everything together until the noodles are fully coated in the sauce.
Serve hot and enjoy.
