Peel and roughly chop the onions. The smaller the pieces, the faster they will dehydrate.
Spread the chopped onions in a single, even layer on a parchment-lined baking sheet.
Dehydrate the onions at 130°F for 5-8 hours. You can use a dehydrator or an oven set to its lowest temperature. The onions are ready when they are completely dry and brittle.
Transfer the dehydrated onions to a spice grinder, blender, or food processor. Add the optional salt.
Blend until a fine powder is formed.
