In a large bowl, combine the cauliflower florets, chopped celery, chopped carrots, and chopped red bell pepper.
Sprinkle salt over the vegetables, mix well, and let them sit for 12 hours to draw out moisture.
After 12 hours, rinse the vegetables thoroughly under cold water and dry them very well.
Place a bay leaf in a large mason jar, then pack the dried vegetables into the jar.
Pour vinegar and water over the vegetables until they are fully submerged.
Finish by drizzling olive oil over the top.
Seal the jar, give it a gentle shake, and refrigerate for at least 2-3 days before serving to allow the flavors to meld.
