Preheat your oven to 400°F (200°C). Cut the head of cabbage into 1-inch thick 'steaks' and arrange them on a foil-lined baking sheet.
Brush both sides of the cabbage steaks with olive oil.
Season both sides generously with garlic powder and black pepper.
Roast for 20-25 minutes, flipping halfway through, until the edges are crispy and the center is tender.
While the cabbage is roasting, mix together the melted butter and 1/2 tsp of garlic powder in a small bowl.
Remove the cabbage from the oven and brush the tops with the garlic butter mixture.
Top the steaks with shredded cheddar cheese, crumbled bacon, and sliced green onions.
Return to the oven for another 3-5 minutes, or until the cheese is fully melted and bubbly.
Serve immediately, topped with a dollop of sour cream and extra green onions if desired.
