Preheat your oven to 400°F. Wash and pat dry the sweet potatoes. Poke holes in the top with a fork.
Bake the sweet potatoes for 50 to 60 minutes, until tender.
While the potatoes bake, melt butter in a large skillet over medium-high heat. Add the chopped red onion and cook until softened and lightly browned.
Add the ground beef to the skillet. Break it up with a spatula and cook until browned.
Season the beef with salt, pepper, paprika, chili powder, dried basil, and dried oregano. Stir to combine.
Stir in the minced garlic, followed by the tomato paste. Mix well until everything is fully incorporated.
Add the fresh spinach to the skillet and cook, stirring, until it has wilted.
Once the sweet potatoes are done baking, carefully slice them open lengthwise. Use a fork to mash the flesh inside each potato.
Spoon the ground beef mixture evenly into the sweet potato boats.
Top generously with shredded mozzarella cheese.
Place the stuffed sweet potatoes under the broiler for 2 to 5 minutes, or until the cheese is melted and bubbly.
