In a small bowl, combine the yeast, sugar, and warm water. Let it sit for 5-10 minutes until foamy.

In a large bowl, combine the flour and salt.

Add the yeast mixture and olive oil to the flour mixture.
Mix until a dough forms, then knead for 8-10 minutes until smooth and elastic.
Place the dough in an oiled bowl, cover, and let rise for at least 30 minutes until doubled in size.
Divide the dough into 5 equal portions and shape into balls.
Roll each ball into a thin circle for your manakish toppings.
Top as desired and bake at 450°F (230°C) for 8-12 minutes until golden brown.
