Dice the potatoes into bite-sized, 1-inch cubes.
In a large mixing bowl, add the diced potatoes and mayonnaise.
Mix thoroughly with your hands or a spoon until all potatoes are evenly coated.
Add a generous amount of all-purpose seasoning to the bowl and mix again.
Transfer the seasoned potatoes to a cast iron skillet, spreading them in a single layer.
Sprinkle more seasoning over the top of the potatoes in the skillet.
Cook until golden brown and crispy. (Note: Video doesn't specify method. For roasting, bake at 400°F / 200°C for 30-40 minutes, flipping halfway through.)
