Preheat your oven to 375°F (190°C).
Press the pork sausage into an even, thin layer on a large sheet pan.
Bake the sausage for about 30 minutes, or until cooked through and browned. The creator prefers it well-done and crispy.
Remove the sausage from the oven and carefully transfer the entire sheet of sausage to a paper towel-lined surface to drain excess grease.
Reduce oven temperature to 350°F (175°C). Spray a clean sheet pan with cooking spray.
In a large bowl, crack the eggs. Add the liquid egg whites, sour cream, salt, and pepper. Whisk until well combined.
Pour the egg mixture onto the prepared sheet pan.
Bake the eggs for about 15 minutes, or until set.
While the eggs cook, lay out your bread of choice (split English muffins, pancakes, or bagels) and cheese slices to create an assembly line.
Once cooked, cut the sheet of sausage and the sheet of eggs into squares that fit your bread.
Assemble the sandwiches: place a slice of cheese on the bottom half of the bread, followed by a sausage patty, an egg square, and the top half of the bread.
Wrap each sandwich individually in a paper towel, then in a piece of aluminum foil.
Place the wrapped sandwiches in a freezer bag, label with the contents and date, and store in the freezer.
