Mix together the spices (cumin, coriander, turmeric, cinnamon, cardamom, black pepper, chili, cloves) with the garlic, ginger, oil, and lemon juice to form a paste.
Score the lamb deeply with a knife so the marinade can penetrate the meat.
Rub the spice paste thoroughly all over and into the lamb.
Wrap the marinated lamb tightly in banana leaves or aluminum foil.
Place the wrapped lamb in a slow cooker.
Add a small amount of water or stock to the bottom of the slow cooker to create steam.
Cook on low heat for 8–10 hours or on high heat for 4–6 hours, until the meat is very tender and falling off the bone.
Carefully unwrap the lamb and serve with rice or flatbread.
