Heat oil in a large pan or skillet over medium heat. Add the diced onion and stir until soft, about 5-7 minutes.
Add the minced garlic and cook for another 30 seconds until fragrant.
Add the dry rigatoni pasta to the pan.
Add the juice and zest of one lemon, followed by the hot water and coconut milk.
Season with a generous pinch of salt, black pepper, and red pepper flakes.
Stir everything to combine and bring to a simmer. Cook, stirring occasionally, for about 13-15 minutes, or until the pasta is al dente and the sauce has thickened.
Serve the pasta immediately, garnished with fresh microgreens.
