Preheat your oven to 350°F (175°C).
Grease a 9x13 inch baking dish with cooking spray.
Place the cubed butter evenly on the bottom of the dish.
Drizzle the vanilla extract over the butter.
Pour the entire bag of marshmallows over the butter in an even layer.
Top the marshmallows with 8 cups of the crispy rice cereal.
Bake for 15-20 minutes, until the marshmallows are puffed and melted around the edges.
Carefully remove the dish from the oven. Grease a spatula with cooking spray.
Stir the mixture together directly in the pan, bringing the melted ingredients from the bottom up to coat the cereal.
Add the remaining 1 cup of crispy rice cereal and stir to combine.
Once everything is mixed, use the greased spatula to press the mixture evenly and firmly into the pan.
Let the treats cool completely before cutting into squares and serving.
Store in an airtight container at room temperature for up to 3 days; reheat gently in a 275°F oven for 2–3 minutes if desired.
