Instructions

1
Combine the sauce ingredients in a small bowl and mix well until there are no cornflour lumps.
2
Bring water to boil and cook ramen per packet instructions, using the soup stock packet that comes with the ramen. (See Notes)
3
Heat oil in wok (or fry pan) over high heat. Add garlic and stir fry for 20 seconds until fragrant - be careful not to burn it.
4
Add carrots and mushrooms and stir fry for 30 seconds, then Chinese cabbage and stir fry for another 30 seconds.
5
Add sauce and cook for 30 seconds until it becomes thick and glossy.
6
Remove from heat, immediately add the bean sprouts and give a quick stir to coat the bean sprouts in the sauce and use the residual heat to slightly cook the bean sprouts.
7
Place noodles and soup in bowl, top with vegetables and garnish with shallots. Serve immediately.

Tips & Notes

Pro tips

Mince garlic finely and stir-fry for only 20 seconds until fragrant—longer cooking burns it and turns the sauce bitter.
Mix the sauce (cornflour, soy, wine, sugar, water) in a bowl before starting the wok so it's ready to pour; cornflour clumps quickly if added dry.
Add bean sprouts only after removing the pan from heat to keep them crisp; the residual heat and glossy sauce cook them without loss of crunch.
Time the stir-fry to finish roughly when the noodles are done boiling so the vegetables stay hot and glossy when plated.

Substitutions

Chinese cooking wine → dry sherry or sake (use same amount)
Peanut oil → vegetable oil or neutral cooking oil (note: peanut oil has a higher smoke point, ideal for high-heat woks)
Shiitake mushrooms → cremini, oyster, or button mushrooms (note: adjust slice thickness so all types cook in the same 30-second window)
Sesame oil → omit entirely or drizzle after plating for more pronounced sesame flavor

Storage & make-ahead

Best served fresh, but store leftover noodles and vegetables separately in airtight containers in the fridge for up to 2 days; reheat noodles in broth and top with cold vegetables or stir-fry fresh vegetables.

Common Questions

What's the trick to keeping vegetables from overcooking?

Add vegetables in stages by cooking time: carrots and mushrooms first (30 seconds), then cabbage (another 30 seconds), and bean sprouts last so residual heat cooks them gently without wilting them into mush.

Can I use a regular frying pan instead of a wok?

Yes, a wok or fry pan both work. A wok just heats more efficiently and gives better stir-fry texture, but timing and technique stay the same.

Why do you add bean sprouts after removing from heat?

This prevents them from becoming overcooked and mushy. The residual heat from the pan and glossy sauce cooks them just enough while keeping them crisp.

What other vegetables work well for this recipe?

Any vegetables work as long as you add them in order of cooking time: hard vegetables (broccoli, snap peas) first, then softer ones (spinach, bok choy) last. Aim for 2.5cm/1 inch pieces so they cook evenly.

Can I make this ahead?

The stir-fried vegetables are best served immediately, but you can prepare and chop vegetables in advance. Reheat noodles with broth and top with freshly stir-fried vegetables for best texture.
