Trim the top and bottom ends of the Vidalia onions and peel off the outer papery layer.
Generously season one cut side of each onion with the chipotle seasoning blend.
Add olive oil to a large pan and heat over medium-high heat.
Place the onions seasoned-side down in the hot pan. Season the top side of the onions.
Cover the pan and cook for 8-10 minutes until the bottom is well-seared.
Flip the onions, cover, and cook for another 8 minutes to sear the other side.
Add about 1/2 cup of water to the pan to begin steaming the onions. Cover and cook for 10 minutes.
Flip the onions. Add another 1/2 cup of water, cover, and cook for another 10 minutes.
Repeat the process of flipping, adding 1/2 cup of water, covering, and cooking for another 10 minutes.
For the final cook, flip the onions, add the last 1/2 cup of water, cover, and cook for about 5 more minutes, or until the onions are completely tender. The total cook time will be about one hour.
Remove the onions from the pan, slice, and serve immediately.
Cool completely and store in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet over low heat or microwave before serving.
