Quickly dip a rice paper wrapper in a bowl of cold water for just a few seconds. Do not oversoak.
Lay the softened rice paper on a flat surface. On the bottom half, layer lettuce, cucumber spears, fresh mint leaves, and sliced cooked pork.
Fold the bottom of the wrapper tightly over the fillings. Fold in the left and right sides.
Place a few slices of mango just above the folded fillings.
Continue rolling the spring roll up tightly to enclose all the ingredients.
To make the dipping sauce, combine peanut butter, hoisin sauce, and milk in a small bowl. Whisk until smooth.
Serve the spring rolls immediately with the peanut sauce for dipping.
