In a large pot or Dutch oven over medium-high heat, add olive oil. Sauté the seasoned shrimp and langostino tails until just cooked through. Remove from the pot and set aside.

In the same pot, add the diced onion, bell peppers, and celery. Season with salt and pepper and cook until softened, about 5-7 minutes.

Add the butter and let it melt. Stir in the all-purpose flour to create a roux, and cook for 1 minute.

Slowly whisk in the chicken broth, scraping up any browned bits from the bottom of the pot. Bring to a simmer.

Stir in the heavy cream, fresh thyme, minced garlic, paprika, and dried tarragon. Continue to season with salt and pepper to taste. Let the gravy simmer and thicken for a few minutes.

Return the cooked shrimp and langostinos to the pot. Add the jumbo lump crab meat and gently fold everything together to combine without breaking up the crab.
