Place the frozen french fries into the air fryer basket and begin cooking according to package directions (or until golden and crisp).
While the fries are cooking, heat a griddle or cast iron skillet over high heat.
Place the two balls of ground beef on the hot griddle and immediately smash them very thin using a sturdy spatula. Season the tops with salt.
Once the edges are brown and crispy (about 1-2 minutes), scrape the patties off the griddle and flip them over.
Immediately place a slice of cheese on each patty. Once melted, stack one patty on top of the other.
In a small bowl, prepare the burger sauce by mixing together the ketchup, mustard, mayonnaise, smoked paprika, and diced raw onion until well combined.
Spread the burger sauce over both halves of the split potato roll.
Arrange the pickle slices on the bottom bun.
Place the stacked, cheesy burger patties on the bottom bun and top with the other half of the bun.
Serve the smash burger immediately with the hot fries from the air fryer.
