Slice the onion and bell peppers into thin strips.

In a large mixing bowl, place the chicken drumsticks. Drizzle with garlic oil and season with salt, black pepper, smoked paprika, and Cajun seasoning.

Add the sliced onions and peppers to the bowl with the chicken.

Using your hands, toss everything together until the chicken and vegetables are evenly coated in the seasonings.

Heat olive oil in a large skillet over medium-high heat.

Place the chicken drumsticks in the hot skillet and pan-sear on all sides to develop color.

Once the chicken is seared, add the seasoned peppers and onions directly on top of the chicken in the skillet.
