Whisk together the yogurt, walnuts, garlic, lemon juice, dill, 1 1/2 teaspoons salt and a few grinds of black pepper in a medium bowl until smooth. Add the ice-cold water and gently whisk until combined. Fold in the cucumber. Cover and refrigerate for at least 1 hour and up to overnight.

To serve, place an ice cube in the bottom of each bowl and ladle the soup on top. Garnish each bowl with a little lemon zest and more dill if desired.
