Vegetarian Pulled Sweet Potato Sandwich

Using a box grater, shred the sweet potato to create a texture similar to pulled pork.
Heat cooking oil in a non-stick skillet over medium heat.
Add the shredded sweet potato to the hot pan and spread it out evenly.
Season the sweet potato with cayenne pepper, garlic salt, paprika, onion powder, and brown sugar. Stir to combine.
While the sweet potato cooks, toast your sandwich bun.
Continue to cook the sweet potato, stirring occasionally, until it becomes tender and starts to char slightly.
Turn off the heat and add the barbecue sauce to the pan. Fold the sauce into the sweet potato until it's fully coated.
Spoon the sweet potato mixture onto the bottom half of your toasted bun.
Top with extra barbecue sauce and sliced onion or coleslaw, if desired.
Place the top bun on the sandwich, slice in half, and serve immediately.
