Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine the cooked and chopped bacon and ground beef.
Add 1 1/2 cups of shredded cheese, Worcestershire sauce, mayonnaise, and eggs to the bowl.
Season with salt and pepper, then add 1/2 cup of crispy fried onions.
In a separate small bowl, whisk together the ketchup and mustard to create the glaze.
Pour about half of the glaze into the meat mixture, then add the breadcrumbs. Gently mix with your hands until just combined.
Transfer the meat mixture to the prepared baking sheet and shape it into a loaf.
Spread the remaining ketchup and mustard glaze over the top of the meatloaf.
Bake for 45 minutes.
Remove the meatloaf from the oven and top with the remaining 1/2 cup of crispy onions and 1/2 cup of shredded cheese.
Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Let the meatloaf rest for a few minutes before slicing and serving.
Refrigerate leftovers in an airtight container up to 4 days; reheat in a 350°F oven until warmed through, or freeze wrapped portions up to 3 months.
Yes. Mix the meatloaf mixture, shape into a loaf pan, cover, and refrigerate up to 24 hours before baking. Add 5–10 minutes to baking time if starting from cold.
The meatloaf is done when an instant-read thermometer inserted into the center reaches 160°F. The glaze should be caramelized on top.
Ground turkey is leaner and can dry out easily. Use 85/15 or 80/20 ground beef for the best texture and flavor in this recipe.
Crushed potato chips, panko breadcrumbs, or toasted breadcrumbs work as toppings. Crispy fried onions add authentic texture and flavor.
Store covered in the refrigerator for up to 4 days. Reheat slices in a 350°F oven for 10–15 minutes or microwave individual portions.
