To make the egg frittata, combine eggs, nonfat milk, Monterey Jack cheese, Parmesan cheese, neutral oil, water, cornstarch, xanthan gum (if using), kosher salt, black pepper, and rice vinegar in a tall container.
Using an immersion blender, blend the mixture until completely smooth.
Pour the egg mixture into a greased 8x8 inch baking dish lined with parchment paper.
Bake at 300°F (150°C) for 20-30 minutes, or until the eggs are just set.
Allow the frittata to cool completely, then remove from the dish and slice into 2.5-inch squares.
To assemble the sandwiches, slice the French dinner rolls in half.
On the bottom half of each roll, layer one egg frittata square, one slice of Gouda cheese, and two slices of cooked bacon.
Place the top half of the roll on to complete the sandwich.
To serve, microwave the sandwich for 1 minute to heat through, then air fry at 375°F (190°C) for 3 minutes until the bread is crisp and the cheese is melted.
