In a large bowl, season the chicken tenders with all-purpose seasoning and garlic butter seasoning.
Add mustard, hot sauce, buttermilk, and pickle juice to the chicken. Mix well to create a marinade and let it marinate.
In a separate shallow bowl, combine all-purpose flour, cornstarch, and more all-purpose seasoning. Mix to combine.
Dredge each marinated chicken tender in the flour mixture, pressing to ensure it's fully coated.
Heat a few inches of oil in a large skillet over medium-high heat. Carefully place the coated chicken tenders in the hot oil.
Fry for 6-8 minutes, flipping halfway, until golden brown, crispy, and fully cooked. Remove from oil and drain on a wire rack.
To make the Bang Bang sauce, combine mayonnaise, sweet chili sauce, and sriracha in a bowl.
Whisk the sauce ingredients until smooth and fully combined.
Pour the Bang Bang sauce over the fried chicken tenders in a large bowl.
Toss the chicken tenders gently until they are evenly coated in the sauce.
Garnish with chopped chives and serve immediately.
