Pat short ribs dry. In a small bowl, stir together 1 tbsp brown sugar, 1/2 tsp smoked paprika, 1 tbsp vegetable oil, 2 tsp salt, and 1 tsp black pepper. Rub mixture all over short ribs.
Peel onion, cut in half, and then cut into ½ inch thick slices. Nestle onions and short ribs in a Suvie pan. Pour 12 oz beer and 1/4 cup water over the beef.
Insert pan into the bottom zone of your Suvie. Input settings and cook now or schedule. Bottom Zone: Slow Cook on High, 8 hours
Once the short ribs have finished cooking, transfer them to a clean dry Suvie pan.
Broil for 10-15 minutes, flipping them over halfway through cooking until browned and fragrant.
While the short ribs broil, skim fat from the pan (up to 2 cups worth) and discard. Divide onions and sauce between plates, top with short ribs, and serve.
