Cook pasta according to package directions until slightly overcooked. Drain and transfer to a large mixing bowl while still hot.
While the pasta is hot, pour over the olive oil and red wine vinegar. Alternatively, you can use a bottled Italian dressing.
Sprinkle with dried oregano or Italian seasoning.
Add the pesto, which will help the dressing cling to the pasta. Mix until well combined.
Stir in the chopped pepperoncini.
Add the muffuletta mix (or chopped olives if using) and stir to combine.
Add the cubed cheese to the bowl.
