In a small bowl, combine the shredded rotisserie chicken with 1 tablespoon of buffalo sauce.
Preheat a mini waffle maker.
Place a layer of shredded mozzarella cheese on the bottom of the hot waffle maker.
Top the cheese with the buffalo chicken mixture.
Sprinkle the crumbled blue cheese over the chicken.
Add the diced red onion, if using.
Drizzle a small amount of buffalo sauce over the layers.
Top with the remaining shredded mozzarella cheese.
Close the waffle maker and cook for about 3.5 minutes, or until the cheese is golden brown and crispy.
Carefully remove the chaffle and place it on a plate.
Top with the remaining buffalo sauce and a drizzle of ranch dressing before serving.
