Cafe Royale

Pro tips

• Hold the sugar cube just above the coffee surface with a spoon to caramelize it slightly before dropping it in—this releases caramel notes.
• Use a sturdy mug or coffee glass; hot liquid + metal spoon can conduct heat quickly.
• Stir gently after the sugar dissolves to ensure the brandy and coffee are fully combined.
• Serve immediately while steaming for the best aromatic experience.

Substitutions

• Mr. Boston Five Star Brandy → Cognac or VSOP brandy (more premium, same effect)
• Hot Black Coffee → strong espresso with hot water (concentrated flavor intensity)
• Sugar cube → 1 tsp brown sugar or demerara sugar (similar sweetness, slightly different caramel notes)

What is the purpose of the sugar cube in Cafe Royale?

The sugar cube sweetens the drink and caramelizes slightly when held over the hot coffee, adding depth and richness to the flavor.

Can you make Cafe Royale without brandy?

Yes, you can substitute with rum, cognac, or other dark spirits, though brandy is traditional and delivers the classic taste.

Should the coffee be at a specific temperature?

Use freshly brewed hot black coffee for best results—the heat helps caramelize the sugar and blend flavors evenly.

Is Cafe Royale the same as Irish Coffee?

No. Irish Coffee uses whiskey and whipped cream; Cafe Royale uses brandy and a caramelized sugar cube for a lighter, more refined drink.
