In a large cast iron skillet over medium-high heat, add a little oil. Place the sausage links in the pan and sear on all sides until golden brown.
Cover the pan and continue to cook the sausages until they are cooked through.
Add the sliced onions and bell peppers to the skillet with the sausages. Season with salt and toss to combine.
Continue to cook, stirring occasionally, until the vegetables have softened to your liking.
Remove the cooked sausages from the pan and set aside.
Top the peppers and onions evenly with the shredded mozzarella cheese. Cover the pan and allow the cheese to melt completely.
