In a large pot, heat the extra virgin olive oil over medium heat.
Add the sliced garlic and cook until it begins to get some color.
Add the chopped onion, carrots, and celery (mirepoix) to the pot.
Sauté the vegetables, stirring occasionally, until the onions are translucent.
Pour in the can of whole peeled plum tomatoes.
Season with salt and ground black pepper to taste.
Stir in the chopped fresh basil, parsley, and oregano.
Cover the pot, reduce the heat to low, and let it simmer for 1 to 1.5 hours.
After simmering, use an immersion blender to blend the sauce to your desired consistency. Start on a low speed to avoid splashing.
Once blended, cover the pot again and let the sauce cook for a little while longer to allow the flavors to meld.
