In a large bowl, combine the chicken thighs with olive oil, salt, black pepper, garlic powder, and about 1 cup of Caesar dressing. Mix well to coat and set aside to marinate.
To make the Caesar dressing, combine mayonnaise, apple cider vinegar, lemon juice, pureed garlic, hot sauce, Worcestershire sauce, and black pepper in a separate large bowl.
Whisk the dressing ingredients until smooth and well combined.
Add the grated Parmesan cheese to the dressing and whisk again until incorporated.
On a hot griddle or large pan, cook the marinated chicken thighs until golden brown, charred, and cooked through.
Lightly toast a large flour tortilla on the griddle on both sides.
In a mixing bowl, combine chopped romaine lettuce, croutons, and grated Parmesan cheese.
Dice the cooked chicken into bite-sized pieces and add it to the salad bowl.
Pour some of the prepared Caesar dressing over the salad and toss everything together until well coated.
Spoon the chicken Caesar salad mixture onto the center of the warm tortilla.
Fold in the sides of the tortilla, then roll it up tightly from the bottom to form a burrito.
Place the wrap seam-side down on the hot griddle to seal and toast the outside until crispy.
Remove the wrap from the griddle, cut it in half, and serve immediately.
Store cooked chicken in an airtight container in the fridge up to 3 days; reheat gently on a skillet or in a 350°F oven until warmed through. Assemble wraps fresh to order.

Yes, but thighs stay more moist during grilling. Breasts will cook faster; reduce grilling time to prevent drying.
Marinate 2–4 hours for best flavor. Overnight is possible but may make the texture softer due to acid in the vinegar and lemon juice.
Assemble just before serving so the tortilla stays soft and lettuce doesn't wilt. Grill and marinate chicken up to 1 day ahead.
Large flour tortillas (10–12 inch) hold the fillings best. Whole wheat or spinach wraps also work; toast lightly to prevent tearing.
1 tsp hot sauce is mild and adds subtle heat. Omit or increase to taste based on your preference and brand.
