Prepare the salad base by shredding the green and red cabbage, thinly slicing the red bell peppers, and slicing the cucumber.
Peel and grate the carrots.
Roughly chop the cashews. A simple way is to place them in a bag and crush them with a can or rolling pin.
Chop the cilantro.
In a large mixing bowl, combine the shredded cabbages, sliced bell peppers, cucumber, grated carrots, and chopped cilantro. Toss to combine.
Shred the meat from the rotisserie chicken and set aside.
To make the dressing, combine olive oil, soy sauce, rice vinegar, toasted sesame oil, maple syrup, grated ginger, minced garlic, lime juice, and optional red pepper flakes in a measuring cup or bowl. Whisk until well combined.
To assemble a serving, place a portion of the vegetable mix in a bowl. Top with shredded chicken, crushed cashews, sliced green onions, and sesame seeds.
Pour the desired amount of ginger lime dressing over the salad.
Toss everything together and enjoy immediately.
