Heat groundnut oil in a large pot or high-sided pan over medium heat.
Add the minced ginger, chopped red chilli, and sliced shallot. Sauté for a minute until fragrant.
Pour in the coconut milk and chicken broth. Add the lime zest and squeeze in the lime juice.
Season with salt and freshly ground black pepper to taste. Stir to combine and bring to a gentle simmer.
Gently place the cod fillets into the simmering broth. Cover the pot and let the cod poach for 8-10 minutes, or until cooked through and flaky.
While the cod is poaching, prepare the pak choi. Halve them lengthwise and place in a tray. Drizzle with soy sauce.
Heat a separate pan and sear the pak choi on both sides until tender and slightly charred. Add any remaining soy sauce from the tray to the pan to deglaze.
Once the cod is cooked, sprinkle with sliced spring onions and drizzle with chilli oil.
To serve, place a portion of cooked rice in a bowl. Add a cod fillet and ladle the coconut broth over it.
Garnish with the seared pak choi, crispy fried onions, more spring onions, black sesame seeds, and fresh cilantro.
