Add rinsed rice to the pot of your rice cooker.
Pour in the chicken broth and water.
Add the grated ginger, diced green onions, and chicken bouillon powder. Give it a quick stir.
Place the chicken thighs into the pot, ensuring they are submerged in the liquid.
Close the rice cooker and set it to the 'Porridge' mode. Cook for about 68 minutes, or according to your machine's instructions.
Once the cooking cycle is complete, carefully remove the cooked chicken thighs.
Shred the chicken meat, discarding any bones.
Return the shredded chicken to the congee and stir to combine. Let it rest for a few minutes to thicken.
Serve the congee in bowls. Garnish with fresh sliced green onions, a drizzle of sesame oil, and a sprinkle of white pepper or chili oil to your liking.
