Finely chop the imitation crab.
In a large mixing bowl, combine the chopped imitation crab, garlic paste, and 2 tablespoons of chopped green onions.
Add the softened cream cheese, sour cream, mayonnaise, soy sauce, and sugar to the bowl.
Add 1 cup of the shredded mozzarella cheese to the mixture.
Mix all ingredients together until thoroughly combined.
Transfer the dip mixture into a baking dish and spread it out evenly.
Sprinkle the remaining 1 cup of mozzarella cheese over the top.
Bake in a preheated oven at 350°F (175°C) for 20 minutes, or until bubbly and the cheese is melted.
While the dip is baking, prepare the wonton chips. Cut the wonton wrappers diagonally into triangles.
Heat vegetable oil in a deep fryer or pot to 350°F (175°C). Fry the wonton triangles for about 20-30 seconds per side, until golden brown and crispy. Remove and drain on a paper towel.
Once baked, carefully remove the dip from the oven.
Drizzle the top of the dip with Thai sweet chili sauce.
Garnish with additional chopped green onions.
Serve hot with the freshly fried wonton chips and enjoy.
