Preheat your oven to 400°F (200°C).
In a large baking dish, add the chopped spinach.
Top the spinach with the diced chicken breasts seasoned with salt and pepper.
Pour in the two boxes of long grain and wild rice mix, including the seasoning packets.
Pour the chicken broth over everything in the dish.
Cover the dish tightly with foil or another baking sheet.
Bake for 40 minutes.
Remove the casserole from the oven, uncover, and give it a good stir.
Place the wheel of garlic and herb cheese in the center of the casserole.
Return to the oven and bake uncovered for another 10 minutes, or until most of the liquid has been absorbed by the rice.
Remove from the oven and stir the melted cheese throughout the casserole until creamy and well combined. Serve immediately.
