Cut off the top 1/4 inch of both garlic heads to expose the cloves.

Place the garlic heads cut-side up in a small baking dish. Drizzle with 1-2 teaspoons of olive oil and a pinch of salt.

Cover the dish with foil and bake for 20-25 minutes, until the cloves are soft and lightly browned.

While the garlic roasts, microwave the russet potatoes on high for 10-12 minutes, flipping them halfway through.
