Remove the breast meat from a rotisserie chicken and place it in the bowl of a stand mixer fitted with the whisk attachment.
Mix on low speed until the chicken is finely shredded.
Using a microplane or fine grater, grate the celery stalk directly into the bowl with the shredded chicken.
Add the garlic powder, onion powder, paprika, and salt to the bowl.
Add the mayonnaise and the juice of a whole lemon.
Mix with a spatula or fork until all ingredients are thoroughly combined.
