Preheat your griddle. Place the hot dogs on the griddle and season them if desired.
While the hot dogs are cooking, slice the Swiss cheese slices in half diagonally and slice the pickle spears lengthwise.
Continue to cook the hot dogs, turning occasionally, until they are cooked to your liking. Then, remove them from the griddle.
Place the deli ham on the griddle and cook until lightly browned. At the same time, toast the hot dog buns on the griddle.
Slice the cooked hot dogs lengthwise, being careful not to cut all the way through.
To assemble, place a toasted bun on the griddle. Layer with Swiss cheese, a squeeze of mayonnaise, and a squeeze of dill mustard.
Add the griddled ham, the sliced hot dog, and a sliced pickle spear.
Fold the bun over, and use a grill press to gently press the hot dog on the griddle for a moment to warm through.
Remove from the griddle and top with potato sticks for crunch before serving.
