In a shallow dish, beat the eggs to create an egg wash.
Dip two rice paper sheets in the egg wash until fully coated and pliable.
Lay the egg-washed rice paper sheets flat on a cutting board, overlapping them slightly to form a long rectangle.
Layer the sliced ham and roast pork down the center of the rice paper.
Drizzle yellow mustard over the meat.
Sprinkle the diced pickles over the mustard.
Top with shredded Swiss cheese.
Tightly roll the rice paper and fillings into a long log.
Carefully coil the log into a spiral shape.
Place the spiral on a parchment-lined baking sheet.
Brush the top of the spiral with any remaining egg wash.
Sprinkle generously with your favorite barbecue seasoning.
