Place the shaved beef in the slow cooker.
Pour the beef broth over the beef, then sprinkle the au jus gravy mix on top.
Cover and cook on low for about 3 hours.
When ready to serve, pile the cooked beef onto sub rolls, optionally with a slice of cheese. Serve with the au jus from the slow cooker on the side for dipping.
