In a large mixing bowl, combine the can of peach pie filling and the can of whole cranberry sauce.
Mix the two fillings together until well combined.
Generously grease a cast iron skillet with butter.
Pour the fruit mixture into the prepared skillet and spread it out into an even layer.
Sprinkle the entire bag of sugar cookie mix evenly over the top of the fruit filling.
Pour the melted stick of butter over the dry cookie mix, covering as much of the surface as possible.
Gently press the cookie mix down with a spoon to ensure it gets moistened by the butter.
Bake in a preheated 350°F (175°C) oven for approximately 1 hour, or until the top is golden brown and the filling is bubbly.
Let the cobbler cool slightly before serving.
Serve warm, topped with a scoop of vanilla ice cream.
