Spray a non-stick frying pan and a slotted spoon with cooking spray. Heat the pan over medium heat.
Hold the slotted spoon over the pan and crack the eggs into it. Allow the egg whites to drain through the slots into the pan, keeping the yolks in the spoon.
Once the whites have spread out, gently add the yolks to the center of the whites in the pan.
Sprinkle the shredded cheddar cheese, bacon bits, and black pepper over the eggs.
When the edges of the egg start to brown and set, use a spatula to fold the sides over the center, creating a rectangular pocket.
Flip the egg pocket and cook for a few more seconds until golden brown.
Place the cooked egg pocket on a slice of toasted bread and top with the second slice.
Slice the sandwich in half and serve immediately.
Best served immediately. Refrigerate leftovers up to 1 day in an airtight container; reheat gently in a skillet or oven at 350°F for 2–3 minutes to restore texture.
Use medium-low heat and wait until the eggs are just set but still slightly moist on top before folding. A non-stick pan with adequate cooking spray prevents sticking and tearing.
Assemble it fresh for best texture, as the bread will soften if stored with warm eggs and melted cheese. You can cook the eggs and bacon the night before and reassemble in the morning.
Cheddar works well, but American cheese, Swiss, or pepper jack also melt smoothly and complement bacon. Avoid hard cheeses like Parmesan.
The edges should be set and slightly opaque while the center is still soft. Fold gently—overcooked eggs will be rubbery.
No, it contains bacon. Omit bacon bits and add sautéed spinach, mushrooms, or tomatoes for a vegetarian version.
