Season both sides of the chicken cutlets with garlic powder, onion powder, and black pepper.
In a large skillet over medium-high heat, cook the chicken for 3 minutes per side until lightly browned. The chicken will not be fully cooked at this stage.
Remove the chicken from the skillet and set aside.
To the same skillet, add the butter and melt. Use a spatula to scrape up any browned bits from the bottom of the pan.
Add the thinly sliced yellow onion and cook, stirring occasionally, for about 15 minutes until softened and caramelized.
Pour in the water and add the packet of French onion soup mix. Stir to combine and bring the sauce to a boil.
Return the chicken to the skillet. Spoon some of the sauce and onions over the chicken. Reduce the heat to low, cover, and simmer for 10 minutes, or until the chicken is cooked through.
Top each piece of chicken with a slice of provolone cheese. Cover the skillet again and cook for another 2-3 minutes, until the cheese is melted and bubbly.
Garnish with fresh parsley, if desired, and serve immediately.
