Heat olive oil in a large cast-iron skillet over high heat until it's shimmering.
While the oil heats, season the sirloin steak bites generously with salt and pepper. Toss with tongs to ensure all pieces are well-coated.
Carefully add the seasoned steak to the hot skillet, spreading it into a single, even layer. Do not overcrowd the pan.
Sear the steak for 3-4 minutes per side without moving it, allowing a deep brown crust to form.
