Cook pasta according to package directions. Drain and allow to cool.
To make the vinaigrette, combine red wine vinegar, olive oil, pepperoncini juice, grated Pecorino Romano cheese, and the Italian dressing mix in a mason jar.
Seal the jar and shake vigorously until the vinaigrette is well combined.
In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced pepperoni, mozzarella pearls, and chopped marinated artichoke hearts.
Season the salad ingredients with salt and black pepper to your taste.
