In a saucepan, add the baking soda.
Very slowly pour in the vinegar while whisking continuously. The mixture will bubble up, so add the vinegar gradually to prevent it from overflowing.
Once all the vinegar is incorporated, place the pot over medium heat.
Allow the liquid to reduce until only about 1 cup remains.
Pour the reduced liquid into a glass tray or dish.
Place the tray in a dehydrator or an oven set to its lowest temperature (around 170°F / 77°C) and let it dehydrate overnight until all the liquid has evaporated and only dry crystals remain.
Break up the dried crystals.
Transfer the crystals to a mortar and pestle or a spice grinder and grind into a fine powder.
Mix in 1 to 2 tablespoons of fine sea salt.
Store in an airtight container. Use as a seasoning for chips, popcorn, meat, or fish.
